Almofada de Cogumelos e Queijo da Ilha | Mushrooms and “Queijo da Ilha” in a pastry

Para o almoço:

Levar ao lume 1 pouco de azeite e 2 dentes de alho. Alourar. Adicionar 250gr de cogumelos brancos (cogumelos Paris) cortados em quartos ou laminados. Cozinhar. Temperar de sal e pimente e adicionar um mão cheia de coentros picados. Colocar sobre uma base de massa quebrada e polvilhar com queijo da ilha ralado. Fechar e levar ao forno (200º) até alourar. Acompanhar com salada. Yuhhmie!!!

For lunch:

Cook 2 cloves of garlic in a pan with olive oil until they are golden. Add 250gr of white mushrooms (Paris mushrooms) cuted in quarters or laminated. Cook. Season with salt and pepper and add a hand full of chopped corianders. Put the mixture in a base of shortcrust (?) pastry and sprinkle with cheese (Queijo da Ilha is a salted portugueese cheese from the Azores…you can use Parmesan). Close up and put in the oven (200º) until golden. Serve with salad. Yuhhmie!!!
